The Supply Chain Operations Reference Model (SCOR Model) A case study of Cricket Farm Entrepreneurs in Ban Saen Tor Community, Bua Yai Sub-district, Nam Phong District, Khon Kaen

Abstract

The country's demand for food has been growing continuously due to the population increased by 0.16% compared to 2016 to 2020 (National Statistical Office, 2019, Page 1). According to the increasing food demand, the National Food and Agriculture Organization has recommended crickets, which has nutritious to be used as an alternative food, replacing proteins from large animals. The study has selected a case study of Ban Saen Tor Community, Bua Yai Sub-district, Nam Phong District, Khon Kaen.  Besides, Ban Saen Tor is a community with 61 households out of 95 households or commercial cricket farmers, but it is still non-systematic breeding crickets. The study aimed to establish a SCOR Model for defining the supply chain of Planning, Procurement, Production, Delivery, and Returns using Interview form as a study tool. The research revealed that supply chain operations were analyzed by 5 conjunctions; Reliability, Responsiveness, Flexibility, Cost, and Asset Management Efficiency to overcome crickets farming management efficiency systematically to minimize costs and reduce potential losses of the supply chain.
