ภูมิปัญญาการทำกาแฟโบราณเพื่อสนับสนุนการ ท่องเที่ยวบนเส้นทางระหว่างกระบี่–เกาะลันตา กรณีศึกษา: ชุมชนบ้านร่าหมาด อำเภอเกาะลันตา จังหวัดกระบี่

บทคัดย่อ

บทความนี้มีวัตุประสงค์1) เพื่อศึกษาภูมิปัญญาการทำกาแฟโบราณบ้านร่าหมาด 2) เพื่อศึกษากรรมวิธีการทำกาแฟโบราณบ้านร่าหมาด 3) เพื่อศึกษาการบริหารจัดการ กลุ่มอาชีพผลิตกาแฟโบราณร่าหมาด วิธีการดำเนินงานวิจัยใช้วิธีการวิจัยเชิงคุณภาพ เก็บข้อมูลโดย การสัมภาษณ์เชิงลึก และการสังเกตแบบมีส่วนร่วม กลุ่มผู้ให้ข้อมูล ประกอบด้วยประธานกลุ่ม รองประธานกลุ่ม เหรัญญิก สมาชิกกลุ่ม และนำเสนอโดย การพรรณนาวิเคราะห์และใช้ภาพประกอบ

ผลการศึกษาพบว่า

1) ภูมิปัญญาการทำกาแฟโบราณนั้นเป็นแบบดั้งเดิม ไม่มีเครื่องทุ่นแรงที่เป็น เครื่องจักรเข้ามาเกี่ยวข้องในกระบวนการผลิต มีการคั่วกาแฟโดยใช้ไม้ฟืนแทนแก๊ส การใช้น้ำตาลอ้อยแทนน้ำตาลทราย

2) กรรมวิธีการทำกาแฟโบราณบ้านร่าหมาด มีวิธีการขั้นตอนที่พิถีพิถัน ทุกขั้นตอน ต้องอาศัยแรงงาน

3) มีการบริหารจัดการกลุ่มที่เป็นระบบระเบียบ ประธานกลุ่มมาจากการให้คะแนน เสียงโดยการยกมือ มีวาระ3 ปี สมาชิกกลุ่มยอมรับและปฏิบัติตาม มีการประชุมกลุ่ม 3 เดือน/ครั้ง มีการแบ่งหน้าที่รับผิดชอบอย่างชัดเจน จัดสรรปันผลตามความรับผิดชอบ ส่งผลให้กลุ่มมีความเข้มแข็งและสมาชิกก็พึงพอใจในการทำงาน

STUDY OF WISDOM OF THAI STYLE COFFEE TO SUPPORT TOURISM ON THE WAY KRABI-KOH LANTA CASE STUDY OF : RAMAD VILLAGE, KOH LANTA DISTRICT, KRABI PROVINCE

From the research in “A study of wisdom of Thai style coffee to support tourism on the way Krabi-Koh Lanta case study of:Ramad village,Koh Lanta district,Krabi province” had the purpose to: (1) To study of wisdom of making Thai style coffee in Ramad village (2) To study of processing of making Thai style coffee in Ramad village (3) To study the management of Thai style coffee group. The data were collected through in-depth interview and participatory observations with 10 members of Thai style coffee group consisting the chairman 1 person, vice-chairman1 person, treasurer 1 person and 7 members. The result of the study are presented using a descriptive approach and illustrations.

The results revealed that

1) Wisdom of Thai style coffee was an original process. It didn’t have any machines. They used the rubber wood for fire instead of gas and they used cane sugar instead of sugar.

2) The processing of Thai style coffee was punctilious and need the man power.

3) There was a good regulation. The chairman was from the members voting. There are 3 each year-term for the leader. There is a meeting 3 times per month. The member are responsibilities and they also accepted and followed the regulation so it made the group growth up strength.
