Abstract

This mixed research approach explored the creation of products using local wisdom by the Community Enterprise Group in Mueang Kalasin district, Kalasin province.. Quantitative data were collected using questionnaires from eight community enterprise groups involving in fish product processing, totaling 205 members. Qualitative data were acquired through participatory practices, including in-depth interviews with 30 individuals from a community enterprise group. Additionally, a product acceptance survey involved 20 community members and 40 individuals outside the community. The results found that the creation of Leela Fried Fish cake was an innovation using Tong Krai fish and grated coconut to create fried fish cakes.  Under the wisdom of fishing. Local ingredients were used to create nutritionally valuable products, aiming to generate income for the community. These offerings add value to Lam Pao Dam fish and Ban Sa-at Natom coconuts, fostering community unity. A cooperative operation leveraging local wisdom was established to create community products, shaping the community's identity and instilling an appreciation for local knowledge among the younger generation. This initiative also aimed for sustainable income generation for enterprise groups, targeting 5,000 baht per month, benefiting local communities and broader society.
