E-San Rice Noodle: Change and Existence in Modern Society

Abstract

This article aimed to study the changes of E-San rice noodle (Kow Poon Sow) in the way of production and consumption and the existence in modern society. The data used in this article is based on qualitative research, which is a way to collect data by interviews and participatory and non-participant observation. The study found that; in the past, E-San rice noodle was a favorite food associated with the important traditions. The production was complex and used many workers, then it was only in the religious ceremony that people in the community had activities together. However, when Thailand country development focuses on developing economic growth under the concept of capitalist economy. As a result, E-San rice noodle was turned into a commercial food from the food in the religious ceremony becomes a food that can be eaten in general. The modern technologies be used and the taste is improved in order to meet the needs of more diverse consumers. So, E-San rice noodle in modern society is adjust of the way of production for existence that conforms to the way of society and consumption change.
