บทคัดย่อ
การศึกษาเรื่องเมืองผ่านอาหารของกลุ่มแรงงานรับจ้างทั่วไป ช่วยสะท้อนให้เห็นถึงความเปราะบางที่กลุ่มแรงงานทั่วไปต้องเผชิญในเรื่องอาหาร จากการดำรงชีวิตอยู่ในพื้นที่เมือง ทั้งในภาวะปกติและเด่นชัดขึ้นเมื่อมีภาวะฉุกเฉินอย่างช่วงการแพร่ระบาดของโรคติดเชื้อไวรัสโคโรนา 2019 ที่ผ่านมาว่า ถึงแม้เมืองจะเป็นพื้นที่ที่มีระบบอาหารที่มีศักยภาพและเอื้อให้สามารถเข้าถึงได้ในหลากหลายช่องทาง แต่ปัจจัยทางเศรษฐกิจ ยังเป็นข้อจำกัดสำคัญที่มีผลต่อความสามารถ ในการเข้าถึงอาหารในพื้นที่เมือง ส่งผลให้ผลการศึกษาจะสะท้อนว่า กลุ่มแรงงานรับจ้างทั่วไป ไม่ได้อยู่ในภาวะความหิวโหยจากอาหาร อีกทั้งแต่ละคนยังมีความรู้และความเข้าใจเรื่องอาหาร ว่าอาหารชนิดไหนเป็นอาหารที่มีประโยชน์และเป็นโทษ แต่สุดท้ายความไม่มั่นคงของรายได้และการอยู่ภายใต้สภาพแวดล้อมเมือง กลับมีส่วนสำคัญที่ผลักดันให้พวกเขาต้องเผชิญกับความเปราะบางในการใช้ชีวิต ด้วยการทิ้งเรื่องคุณภาพและโภชนาการอาหาร ไว้หลังปัจจัยทางเศรษฐกิจของตน ขณะที่หลายครอบครัวเคยอยู่ในบทบาทเกษตรกรผู้ผลิต แต่การเข้ามาเป็นแรงงานรับจ้างทั่วไปในเมือง ทำให้พวกเขาต้องตกอยู่ในภาวะที่เปราะบางในเรื่องอาหารและยังต้องทำงานหนักเพื่อให้มีเงินไว้สำหรับซื้ออาหารในแต่ละมื้อ ด้วยเหตุนี้ การใช้ชีวิตของแรงงานรับจ้างทั่วไปในพื้นที่เมือง จึงเป็นการใช้ชีวิตบนพื้นที่ ที่เศรษฐกิจภายนอกรอบตัวกำลังทะยานไปข้างหน้า แต่เศรษฐกิจภายในของพวกตนกำลังแยกไปในทิศทางตรงกันข้ามอย่างสิ้นเชิง
