Abstract

Thai dessert of Trok-khaw-mao community represents the identity of people in Bangkok Noi district which can be seen from the ingredients and manufacturing processes following the unique traditional local wisdom in order to preserve the uniqueness and the original taste of the dessert. However, the guideline for packaging design which is unique and helps to extend the shelf life of the dessert is still lacking. The trademark has also not been registered under the Intellectual Property Law. As a result, the manufacturers have not had the bargaining power. This research aimed 1) to study the specification of four kinds of Thai desserts in order to design the trademark and process the application for trademark protection, 2) to study the information on packaging, 3) to design the packaging for the four kinds of Thai desserts, 4) to examine the shelf life of the four kinds of Thai desserts, and 5) to explore the satisfaction on the packaging design, the designed trademark under the brand “Thai dessert Bankaomow,”and the application for trademark protection. The study investigated the shelf life of the four kinds of Thai desserts based on the microbiological quality, the amount of microorganism, yeast and mold which is packed in three types of plastic packages at room temperature and stored at 5 degrees Celsius. The result revealed that the Polyamide (PA) bags can extend the shelf life of the four kinds of Thai desserts. In addition, the identity and geographical indication of the community have been used in designing packages for the four kinds of Thai desserts.
