Abstract
This article summarizes the contents of Suphanburi water chestnuts that have been registered as a geographic indication in Thailand. The content includes the history of Suphan water chestnuts. Registration as a Geographical Indication of Suphanburi Province cultivation area Cultivation process Cultivation source Nutritional value of Suphan water chestnut (Chinese water chestnut) as well as the development of food products from water chestnuts. In community enterprises where various foods related to Suphan water chestnuts are prepared The author team focuses on gathering information to benefit those interested in product development. Process water chestnuts from community enterprises that farm water chestnuts to develop new products that provide a variety of options for consumers. and benefits the overall group of communityenterprises that generate income from water chestnut processing. Consumer groups can increase their choice in buying products both for eating and as souvenirs. This will bring stability to community enterprises that cultivate water chestnuts in Suphanburi Province
