บทคัดย่อ
การวิจัยครั้งนี้ มีวัตถุประสงค์เพื่อศึกษาวัฒนธรรมทางอาหารและความมั่นคงทางทรัพยากรอาหาร รวมทั้งผลิตภัณฑ์ท้องถิ่นที่สามารถนำมาเป็นผลิตภัณฑ์ทางการท่องเที่ยวตามพื้นที่ชายขอบของจังหวัดกาญจนบุรี โดยกำหนดพื้นที่ศึกษาคือ อำเภอสังขละบุรีและอำเภอทองผาภูมิ การวิจัยนี้เป็นการวิจัยเชิงคุณภาพ ซึ่งมีเครื่องมือคือแบบสังเกตและแบบสัมภาษณ์กึ่งโครงสร้าง (Semi–structured Interview)
ผลการวิจัยพบว่า ปัจจุบันสภาพวัฒนธรรมทางอาหารและความมั่นคงทางทรัพยากรอาหารของทั้งอำเภอสังขละบุรีและอำเภอทองผาภูมิ มีพื้นฐานมาจากการสภาพแวดล้อมและทรัพยากรธรรมชาติที่เอื้อประโยชน์ต่อการดำรงชีวิตเป็นหลัก ทั้งการทำการประมง การทำเกษตรกรรมและการใช้ประโยชน์ จากการเก็บหาของป่าด้วยภูมิปัญญาท้องถิ่นเดิมที่สั่งสมมาตั้งแต่บรรพบุรุษ วัฒนธรรมทางอาหารของกลุ่มชาวมอญและกลุ่มกะเหรี่ยงจึงมีความคล้ายคลึงกัน กล่าวคือชุมชนชายขอบเหล่านี้มีการดำรงชีวิตบนความหลากหลายทางธรรมชาติที่ทำให้ชุมชนสามารถสืบทอดวัฒนธรรมเฉพาะกลุ่มของตนเองได้สืบไป
