ตำรับอาหารภูมิปัญญาเชื้อสายโปรตุเกสในชุมชนกุฎีจีน

บทคัดย่อ
ภูมิปัญญาชุมชน เป็นสิ่งสะท้อนให้เห็นถึงรูปแบบวิถีชีวิต ขนบธรรมเนียมประเพณีและวัฒนธรรมที่มีการพัฒนาสืบต่อกันมา งานวิจัยนี้ เป็นงานวิจัยเชิงคุณภาพแบบปรากฏการณ์วิทยา มีวัตถุประสงค์เพื่อศึกษาข้อมูลอาหารและตำรับอาหารภูมิปัญญาเชื้อสายโปรตุเกสในชุมชนกุฎีจีน ผู้ให้ข้อมูลคือ ผู้สืบเชื้อสายโปรตุเกสในชุมชน 10 คน เครื่องมือที่ใช้ในการวิจัยได้แก่ แบบสัมภาษณ์เชิงลึกแบบไม่มีโครงสร้าง รวบรวมข้อมูลด้วยการสัมภาษณ์เชิงลึกและการสังเกตแบบไม่มีส่วนร่วม วิเคราะห์ข้อมูลโดยการวิเคราะห์แก่นสาระ ตรวจสอบความน่าเชื่อถือโดยใช้วิธีตรวจสอบแบบสามเส้าด้านข้อมูล
ผลการวิจัยพบว่า 1) ข้อมูลอาหารภูมิปัญญาเชื้อสายโปรตุเกส ชาวโปรตุเกสมีวัฒนธรรมการทำและการบริโภคอาหารที่เป็นเอกลักษณ์เฉพาะตัวโดยถ่ายทอดภูมิปัญญาจากรุ่นสู่รุ่น ซึ่งปัจจุบันยังมีการทำอาหารรับประทานในครอบครัวและจำหน่ายในร้านอาหารของชุมชนกุฎีจีน 2) ตำรับอาหารภูมิปัญญาเชื้อสายโปรตุเกส เป็นการบันทึกตำรับอาหารจากผู้สืบเชื้อสายโปรตุเกสในชุมชนกุฎีจีน จำนวน 20 ตำรับ ประกอบด้วย อาหารคาว 12 ตำรับ อาหารจานเดียว 2 ตำรับ อาหารว่าง 2 ตำรับ อาหารหวาน 4 ตำรับ แบ่งตามวิธีการปรุงได้ 6 ประเภท ได้แก่ แกง ต้ม ตุ๋น ผัด ทอด และอบ รายละเอียดของแต่ละตำรับอาหารประกอบด้วย ชื่ออาหาร คุณลักษณะของอาหาร ส่วนประกอบ วิธีการทำ เคล็ดลับการทำ และวิธีการรับประทาน โดยนำเสนอตัวอย่างตำรับตามชนิดอาหาร 4 รายการ ได้แก่ เนื้อซัลโม ขนมจีนแกงไก่คั่ว สัพแหยก และขนมฝรั่งกุฎีจีน งานวิจัยนี้มีข้อเสนอแนะให้ส่งเสริมกิจกรรมการสร้างประสบการณ์ตามรอยอาหารโปรตุเกสร่วมกับโปรแกรมการท่องเที่ยว และเผยแพร่ความรู้เกี่ยวกับตำรับอาหารโปรตุเกส ในรูปแบบของหนังสือ ตำรับอาหาร สื่อออนไลน์ เพื่อให้ภูมิปัญญานี้คงอยู่สืบไป
