保定饮食文化的 “味道之道”、文化叙事与身份建构 —— 基于地理根基与权力场域的机制分析

本研究旨在深入探讨河北保定独特的饮食文化体系，剖析其形成的深层机制、风味哲学及社会功能。 通过整合历史文献研究与田野调查资料，研究发现：保定饮食文化不仅是自然资源禀赋的产物，更是由清代直隶总督署这一政治权力中心驱动、南北文化高频流动而形成的“雅俗共赏”的复合体系。 研究进一步解构了保定饮食的“味道之道”，将其提炼为由发酵文化、时间技术与温度礼仪构成的系统性风味结构，并在“中和为美”的审美哲学指引下，实现了从地方风味向文化符号的转化。 最后，本文论证了通过官府菜的“权力叙事”与民间小吃的“记忆叙事”，保定饮食如何在数字化时代完成地域身份的重新建构，为地区非物质文化遗产的活态传承提供理论路径。
