Local Food Identity and Support for Food Tourism towards Developing Food Soft Power Potential in Photharam District, Ratchaburi Province

Abstract
This article aimed to investigate local food identity within gastronomy tourism, examine tourists' advocacy behaviors, analyze the influences of cultural identity opinions, satisfaction, and development guidelines on food advocacy, and propose strategies to elevate local gastronomy tourism as a food soft power in Photharam District, Ratchaburi Province. Qualitative data were obtained from in-depth interviews with 10 key informants and analyzed via thematic and SWOT approaches. Quantitative data were gathered using questionnaires from 400 tourists and analyzed through descriptive statistics and multiple regression analysis. The findings revealed that: 1) Photharam’s culinary identity is forged by the convergence of four ethnic groups within the Mae Klong River basin ecosystem, with black tofu and sweet preserved radish serving as iconic products. 2) Tourists' opinions regarding local food identity and overall satisfaction were at high levels, with taste receiving the highest evaluation 3) Multiple regression analysis demonstrated that satisfaction, development guidelines, and identity opinions significantly and positively influenced local food advocacy behaviors (R2 = 0.394, p < 0.05), with satisfaction exerting the highest predictive power. 4) Soft power promotion strategies encompassed six vital dimensions: proactive digital communication, cultural capital management through storytelling, collaborative experience creation, community networking, quality standard maintenance, and sustainability. This research significantly contributes to grassroots economic stimulation in secondary tourism cities by upgrading the local culinary supply chain, preventing the erasure of multi-ethnic gastronomic heritage, and establishing a practical blueprint for shifting conventional trading into experiential food tourism to foster sustainable value creation.
