Discourse Analysis : Maintaining Instructor Teaching Identity in Fruit and Vegetable Carving Courses in the Faculty of Home Economics Technology, Rajamangala University of Technology Phra Nakhon

Abstract
The objective of this research project is to examine the maintenance of instructor identity in fruit and vegetable carving courses in the Faculty of Home Economics Technology, Rajamangala University of Technology, Phra Nakhon, by analyzing texts, practical discourse, and social practices. This research is qualitative, using discourse analysis (Fairclough), studying documents, performing observations and conducting in-depth interviews with people in the Faculty of Home Economics Technology, consisting of the director of the institution, instructors of fruit and vegetable carving, and 15 undergraduate students in the Department of Home Economics Business Administration, Faculty of Home Economics Technology.
The results of the text analysis revealed 7 factors: 1) theoretical knowledge; 2) practical skills; 3) personal characteristics; 4) creative thinking; 5) participation in a variety of activities; 6) occupational aspirations; and 7) student identity. The results of the practical analysis of discourse revealed the process of knowledge building for teaching fruit and vegetable carving and the dissemination of arts and culture, while practical social observation has shown the re-production of identity through teaching and learning activities—both theoretical and practical skills. Participation in various activities by faculty representatives for the re-production of cultural stereotypes was mainly the director, instructors, and undergraduate students. In addition, there is support from government and private agencies that encourage and support students to see the importance of their field of study.
