Development of Food Recipes And Nutritional Value of Local Food to Promote Health of Diabetic Patients in Muang District Maha Sarakham Province.

Abstract

The purposes of the study were 1. to investigate the conditions and local food to serve good health for the diabetic patients 2. to study the recipe and analyze the nutritions of the local food to serve good health for the diabetic patients, and 3. to study the ways to serve good health for the diabetic patients. The reserch is the mixed method. The data were selected by purposes random sampling. The participants were 120 people The instruments were the survey, the indept- interview, the previous 24 hours interview, the group discussion, and the operation meeting. The results shown that 1) most patients were older people which having health problems and mental problems. Most of them could not control themselves about the nutritions and they did not prescribe by doctors. These caused them a lot problems in doing daily life activities and Knowledge of local food found that the consumption of people today has changed. With inheritance and application of local wisdom in accordance with the current way of life Most of which consume sticky rice and food sources of the community are both natural and man-made. Most suppliers are female. The food is bought in the market and stored naturally. Most of the way to cook fishy dishes is fermented fish and not coconut milk. The sweet food is mainly made from rice. 2) Local recipes that are consumed in daily life and on special occasions, including 2 kinds of rice, 27 savory dishes, 2 desserts. and 2 types of beverages, whose food recipes contain complete nutrition, including carbohydrates, protein and fat and and 3) the guidelines consist of 3.1) health promoting hospitals together with local health networks to organize food demonstration forums and exchange experiences of patient care among families; 3.2) Subdistrict administrative organizations should support the budget for the preparation of local food manuals for patients. Diabetes 3.3) Families procure and cook local food with appropriate nutrition for diabetics to consume, and keep food records. 3.4) All government agencies and families set up demonstration gardens to grow local vegetables and herbs in order to increase local food sources in the area. Community.
