Abstract

This academic article to present healthy food because it is clean, safe, tasty, and simple with seasonal ingredients. Also, it is a food combining nutrition and phytochemicals, which promotes health prevention and care. Since COVID-19 has been pandemic in Thailand, the risky group after exposing to the virus tentatively having severe symptoms or the highest mortality rate is the elderly. At present, the number of the elderly in Thailand has increased and the highest number of the elderly is in northeastern region of the country.  Health promoting food preventing the corona virus among the risky group becomes essential.  This article presents ways of health care taking by consuming northeastern local food for increasing immunity against COVID-19 among the elderly by applying the nine principals of nutrition as a practical guideline.  The principals will be employed as guideline for promoting local northeastern food and for selecting healthy northeastern local food.  These, therefore, will support the elderly to consume appropriately in terms of sufficient nutrition, immunity boosting, health promotion among the elderly to be healthy and able to live happily.
