Innovation Management of Food Surplus by Creation Value of Participation in Environment of community in Nonthaburi Province

Abstract
This research aimed to investigate the factors affecting surplus food management through environmental value co-creation and community participation in Nonthaburi Province. A mixed-methods approach was employed. The quantitative phase involved 447 household food managers, and data were analyzed using descriptive statistics, Pearson’s correlation, and stepwise multiple regression. The qualitative phase included in-depth interviews with 15 purposively selected key informants.
Findings showed that the perception of food surplus management (β = 0.367), community and social factors (β = 0.447), and motivation (β = 0.254) significantly influenced management behavior, accounting for 73.0% of variance (R² = 0.730). Innovation in surplus food management was also significantly influenced by four predictors—perception, behavior, attitude, and motivation—explaining 50.1% of variance (R² = 0.501). Key barriers included a lack of knowledge, limited technology access, and insufficient incentives. However, strong community networks played a critical role in promoting sustainable behavior.
The study highlights the importance of integrating community participation and environmental awareness into public policy and local innovation to improve household-level food waste management. Findings can support policymaking and practical models in urbanizing areas across Thailand.
